We admit it. We've sort of got a thing for good food and wine. With Executive Chef Tristan Holst at the helm, we celebrate local offerings from the Pacific Northwest.
Our restaurant menu showcases local seafood harvested from Puget Sound and the Hood Canal with savory creations like tiny sweet oysters or a crab cocktail with papaya and mint... Mmm, a glass of Washington Sauvignon Blanc with that, please. Fresh local lettuces and handcrafted artisanal cheeses. And a changing menu that is simple and refined at the same time with flavours that expand in your mouth. Truth is, we’re proud to serve you some of the best food and wine in the region.

Tristan Holst, Executive Chef
With a passion for cooking, Alderbrook’s Executive Chef Tristan Holst brings more than a decade of experience with some of the Pacific Northwest’s finest kitchens to Alderbrook. Prior to joining Alderbrook, Holst acted as Executive Chef at CI Shenanigans in Tacoma, Corporate Chef for Access Golf and most recently as Executive Chef at Tacoma’s El Gaucho before being promoted to El Gaucho Seattle. Integrating his signature style to The Restaurant at Alderbrook’s ever evolving menu – which features decadent Pacific Northwest seafood and regional cuisine – Holst oversees all day-to-day aspects of Alderbrook’s dining offerings, including menu planning for The Restaurant at Alderbrook, wedding catering and menus for specialty events such as Alderbrook’s quarterly five-course winemaker dinners. Holst resides in University Place, Washington, with his wife and four children.
